These are a slightly softer, thicker cracker with lots of flavor from the herbes de Provence and aged cheese. They are delicious for snacking or as an accompaniment to wine. Make them for the Eat Local Challenge or any time you want an easy homemade snack.
Herbes de Provence Cheese Crackers

These Herbes de Provence cheese crackers are rich with the flavors of aged goat cheese and aromatic herbs. Perfect as a wine pairing or snack.
½teaspoonherbes de Provence, Shepherd Farms recommended
3tablespoonsbutter, chilled and cut into cubes
1cupgrated firm, aged cheese, I use Drake Family Farm Idyllwild aged goat cheese
¼cupmilk, chilled
Instructions
Preheat oven to 375°. Combine the flour, salt, pepper and herbes de Provence in the bowl of a food processor and pulse until combined. Add the butter and pulse until it resembles coarse meal. Add the cold milk and pulse just until dough comes together.
Form the dough into a log about 1½ inches in diameter, wrap in waxed paper and refrigerate for several hours or overnight. Unwrap the dough and slice into ¼-inch rounds. Place on a baking sheet an inch apart. Bake 12–15 minutes. Transfer to a rack to cool. Store in an airtight container.
