Okayu Congee (Rice Cooker Method)
Okayu, a Japanese version of congee, is thickish, mild and firmly believed to be restorative. It’s the ideal comfort dish, made here with your trusty rice cooker, which effortlessly handles the hour-long soak–simmer–warm cycle. A poached egg boosts the protein content. You can also add a modest amount of firm vegetables—especially in-season vegetables from our farmers’ markets: asparagus in the spring, corn in the summer and kabocha squash in the winter.
