Ingredients
- 1 ½ cups English peas, shelled, blanched for 2 minutes in boiling water then drained
- 1 avocado
- ¼ cup mint leaves, finely chopped
- Juice of 1 1/2 lemons
- ⅓ cup olive oil
- 1 large pinch coarse sea salt
- 5-6 grinds black pepper
Instructions
- Place all of the ingredients into a food processor fitted with a metal blade. Purée until smooth. Taste, adding more lemon juice and salt if necessary. Serve with crackers or toasted sourdough.
