Recipes from Metropulos: Metro’s Pumpkin Pie

Beginning very early in the life of Metropulos, we created an “Everything But the Bird” menu for Thanksgiving. This menu included everything you might need for Thanksgiving except —you guessed it—the turkey. As a team, we worked for days preparing all the traditional, or not-so-traditional, dishes for Thanksgiving. From cheese boards to potatoes (sweet or mashed or, for a couple of years, Greek lemon) to green beans and morning quiches. And pies. We made a lot of pies. It was hard work but also gratifying and fun to see all our customers the Wednesday before Thanksgiving, as they stopped in to pick up their order and other goodies for their Thanksgiving tables. It was my happy place, being in the kitchen with my team, and greeting people who were so grateful to have some kitchen help for the big day. So many hugs. That’s what I miss the most: the hugs and the friendships.
Many families ordered this pie year after year. One family in particular even ordered this pie for their son’s birthday on several occasions. So this goes out to all my pie fans out there. You know who you are, I haven’t forgotten you, and I miss you too. I hope you have a happy Thanksgiving.
