Ingredients

  • 4 figs, Mission recommended, 2 larger, sliced, 2 smaller, cut to add to glass rims
  • ½ ounce sage simple syrup
  • 1 ounce orange juice, fresh
  • 1 ounce lemon juice, fresh
  • ounces rum, a gold Jamaican rum like Appleton Estate works well
  • 2 ounces rye
  • 4 dashes Angostura bitters
  • 2 sage leaves

Sage Simple Syrup

  • 1 cup white sugar
  • 1 cup water
  • 15 sage leaves

Instructions

  1. Muddle the 2 sliced figs in a shaker with the simple syrup, orange juice and lemon juice. Add the rum, rye and bitters to the shaker along with ice. Shake well. Double strain (to keep tiny bits of fig out of the drinks) into two cocktail coupes. To garnish, take each smaller fig and make a tiny cut off center on its top so that you can jab a sage leaf into the incision. Slip a fig-sage "sculpture" onto the rim of each glass

For the Sage Simple Syrup

  1. Bring the water and sugar to a vigorous boil in a smallsaucepan, stirring to help dissolve the sugar. Add the sageleaves. Turn off heat and let steep 15 minutes. Remove theleaves. Pour simple syrup into a clean jar with lid. Aftercooling, store in refrigerator. Stays good for 2–3 weeks.
