- 1 Napa cabbage, thinly sliced (about 1½–2 quarts)
- 2-3 scallions, thinly sliced
- 1 bunch cilantro, stems removed and chopped (about 1 cup)
- 1 jalapeño pepper, seeded and finely chopped
- 1 handful chopped peanuts, optional
For the Dressing
- 1 teaspoon peanut butter
- 3-4 tablespoons lime juice
- 2 tablespoons tamari, or soy sauce
- 6 tablespoons olive oil
- Salt and pepper, to taste
Combine the shredded cabbage, scallions, cilantro and jalapeño pepper in a bowl. Sprinkle some chopped peanuts on top if you like.
In a small bowl, combine the peanut butter, lime juice and soy sauce. Whisk in the olive oil and add salt and pepper to taste and add a little more lime juice if needed.
Drizzle some of the dressing over the cabbage and toss thoroughly. Add more dressing if needed to coat thoroughly. Serve immediately.
