Bee Gin Again combines the bold flavors of Goleta Red’s barrel-rested gin, Meyer lemon, and local honey thyme syrup for a fragrant cocktail that reinvents a Prohibition classic.

Ingredients

  • 1 ounce honey thyme water, see recipe below
  • 1 ounce lemon juice, fresh (Meyer preferred)
  • 4 ounce Goleta Red Goodland Barrel Rested Gin
  • 2 strips lemon peel, for garnish

Honey Thyme Water

  • ½ cup water, heated
  • ½ cup honey, local (we used Hollister Ranch)
  • 2 sprigs thyme, slapped, then leaves removed

Instructions

  1. Add all ingredients except for the lemon peels to a shaker with ice and shake well. Strain into 2 coupes. Decorate each with a lemon peel.

For the Honey Thyme Water

  1. Add ½ cup heated water just before boiling to ½ cup local honey (Hollister Ranch). Add a tablespoon of slapped fresh thyme. (You slap the sprigs so that they evince some of their oils.) Stir to mix. When it cools a bit, filter into a glass container to store. Keeps in the refrigerator for weeks.
