- 1 ounce honey thyme water, see recipe below
- 1 ounce lemon juice, fresh (Meyer preferred)
- 4 ounce Goleta Red Goodland Barrel Rested Gin
- 2 strips lemon peel, for garnish
Honey Thyme Water
- ½ cup water, heated
- ½ cup honey, local (we used Hollister Ranch)
- 2 sprigs thyme, slapped, then leaves removed
Add all ingredients except for the lemon peels to a shaker with ice and shake well. Strain into 2 coupes. Decorate each with a lemon peel.
For the Honey Thyme Water
Add ½ cup heated water just before boiling to ½ cup local honey (Hollister Ranch). Add a tablespoon of slapped fresh thyme. (You slap the sprigs so that they evince some of their oils.) Stir to mix. When it cools a bit, filter into a glass container to store. Keeps in the refrigerator for weeks.
