Herbed Fingerling Potatoes

Ingredients
- 2 pounds fingerling potatoes, washed
- ½ cup parsley, finely chopped
- ¼ cup shallots, finely chopped
- 2 tablespoons chives, finely chopped
- 1 tablespoon capers
- 1 tablespoon olive oil, extra virgin
- ½ teaspoon sea salt, coarse
- 4-5 grinds black pepper
- Juice of 1/2 lemon
Instructions
- Place the potatoes in the upper part of a vegetable steamer and cook until they are fork tender, about 15–20 minutes, depending on size.
- Combine the remaining ingredients in a serving bowl. Add the cooked potatoes and toss everything together so the potatoes are well coated.
