With Ca' Dario and August Ridge

Above, left is the first course Tortino al Parmigiano, a very light flan infused with Parmesan cheese and beautifully paired with the August Ridge 2017 Pinot Grigio; right is the Insalata di Rughetta, an arugula salad with shaved artichoke hearts, asparagus, crispy pancetta and a mustard vinaigrette paired with their 2014 Barbera.

Second row, the Risotto al Tartufo Nero, made with arborio rice and fresh black truffles, paired with the August Ridge 2013 Estate Reserve Ingenious, a blend of 72% Nebbiolo, 20% Merlot and 8% Cab Sauv.

Third row, left is the Quaglie Arrosto, roasted quail with porcini ragout, spinach, parmesan and polenta, paired with their 2013 Estate Reserve Jovial, a blend of 68% Sangiovese, 22% Cab Sauv, 10% Merlot; right is the perfect sweet ending to our meal: Sorbetto della Casa.
