Horiatiki (Peasant’s Salad)

Dressing:

⅓ cup olive oil

Juice of 1 lemon

1 tablespoon Greek seasoning (there are so many to choose from—Theo has a lovely one at Global Gardens)

 

Lettuce

Tomatoes, sliced

Red onion, sliced

Feta cheese

 

Whisk dressing ingredients together and pour over the lettuce, sliced tomatoes, sliced red onion, and feta cheese.


Laura Booras is the general manager at Riverbench Vineyard & Winery in the Santa Maria Valley. She lives on the vineyard, where she regularly hosts food writers, celebrity chefs and wine critics for unique meals prepared with locally sourced ingredients.
